Pink Oyster(Pleurotus djamor)is a tropical strain that produces beautiful clusters of light pink to deep pinkish-redcapsthat are a favorite at farmers’ markets.They are succulent and savory, and have a denser texture than other oyster varieties. They aregreat for beginners because they colonize quickly andare reliable producers in warmer temperatures.

When cultivated outdoors, pink oysters fruit prolifically throughout summer. As a tropical strain, they also thrive with higher humidity. Note that they are not cold tolerant and their shelf life is shorter than other oyster varieties.
